My #1 gluten-free waffles (easy and yummy!)

I’ve got a treat for you…  but it’s not what you may think. 

Chocolate cake may be delicious and strawberry pie may be your favourite, but I’d rather share one of my favourite recipes with you today: gluten-free waffles!

I’m still settling in here and am trying to get used to the oven, the kitchen, the best window for taking photos etc… so I thought why not make it easy for now and make some gluten-free waffles with the waffle iron.

You know this is not a professional baking or cooking blog, so I can’t tell you a great story about the waffles, or the ingredients or myself… I’ll just throw the recipe at you and we’ll figure it out together.

Note: with me being coeliac and this being a gluten-free recipe, I always use a tsp of flax seed with my gf flour to make it a bit chewier if you get me? If you’re not using gluten-free flour, you don’t have to add it. Vegan substitutes: I’ve made these waffles as vegan gluten-free waffles before and they work well, although they’re usually not as fluffy as the ones using eggs.

Waffle Iron: I used a cheap 3-in-1 waffle maker / waffle iron. Whatever you have works best I’d say.

INGREDIENTS

  • 1 teaspoon gluten-free baking powder

  • 2 cups glutenfree flour

  • 1 tbsp sugar of choice

  • ¼ tsp salt

  • ½ tsp vanilla extract

  • 2 eggs + 1 tbsp flax (or plant based alternative)

  • 1 ¾ cup milk (I use oat or soy milk)

  • ½ cup oil of choice

Preheat your non-stick waffle iron.

  1. Add all the dry ingredients into your mixing bowl, whisk until combined.

  2. Add in vanilla extract, eggs (or substitute), milk, and oil. Mix until just combined and smooth.

  3. Make sure your waffle iron is hot before you add the batter.

  4. Pour mix onto hot waffle iron. Cook until golden brown.

  5. Remove waffle from waffle iron and repeat until all waffles are cooked.

  6. Top with your favorite toppings. This waffle recipe can be doubled, or tripled, or… you do you. 😁
